Teams is a truly native cloud Office 365 application, built upon layers of services from AzureAD, SharePoint, Onedrive and Exchange, so to allow guest access you are throwing switches to allow guests in these services. If they leave a team, they would have to be re-invited by an owner.
Guest access in Teams is a fantastic feature, I really think that organisations should enable it and start allowing their staff to work as a team with your partners, customers, or suppliers. And if that's not strange enough: Joe User (Guest) can be added successfully to *some* private channels, but not others, so the issue doesn't lie with a particular guest or a particular channel/team.
